Original name: Sesame tahina – Premium quality طحينة السمسم
T ahini – or tahini – is sesame pulp. Sesame in Babylonian myths had magical power. No wonder – this ingredient is actually a rich source of protein, magnesium, vitamin B12, fat, calcium, potassium, carbohydrates and amino acids, methionine and omega-3 and omega-6 fatty acids.
Served as a standalone dip, it also serves as a main ingredient in hummus, baba ghanoush, and halva. Used in cuisines of the eastern Mediterranean region, from the Balkans, the Caucasus, and the Middle East to North Africa. It is also widely used in Chinese and Southeast Asian cuisine, especially Vietnamese cuisine.
It helps with rheumatic diseases, dry cough, visual disturbances, blood in the urine, numbness, headaches, and nervous spasms. It is recommended for the elderly (because they absorb calcium less well), children, and nursing mothers. People with high blood pressure, heart and blood vessel diseases, and even prostate cancer will also feel better thanks to sesame paste. Due to the „magical” properties of sesame, it is worth introducing it into your daily kitchen.
Tahini can be used in the kitchen:
- instead of chocolate or nut creams, e.g. with bread, preferably in combination with e.g. pomegranate or carob molasses (carob);
- as an ingredient in halva, hummus and many other oriental dishes;
- as an ingredient in desserts, e.g. muffins, cakes and cookies.
